Panini with grilled vegetables

Ingredients

  • Grilled pork fillet
  • Cheese (Tilzite or Holland) 
  • Olives
  • Mayonnaise
  • Parsley
  • Grilled vegetables - eggplant, zucchini, pickled paprika

Preparation

  • Prepare grilled vegetables - cut zucchini and eggplant lengthwise into 3 mm thick slices.
  • Grill the zucchini and eggplant on a hot grill or stove top and, without waiting for them to cool down, marinate.
  • Marinade is prepared by mixing oil, chopped garlic, ground black pepper and basil. Balsamic vinegar can also be added.
  • Place the panini rolls on the grill pan and fry a little to make the grooves. Spread mayonnaise on both sides of the panini.
  • On the bottom side of the panini, top with grilled vegetables, sliced pork fillet (or roast), sliced olives, parsley and slices of cheese.
  • Cover with the other panini bread, lightly press and bake on the grill or in the oven at 180°C for 5-8 minutes (or until the cheese melts).
